The Muffins That Fool The Whole Family

Confession time.

My husband is deeply suspicious of anything labelled "healthy" and "organic". Mention protein powder or chia seeds and he's already mentally switching off. 

But these?

He happily demolishes them.

Even better, the kids think they're getting something a little bit special, which means lunchboxes get emptied, afternoon tea is sorted, and I feel like I've had at least one small parenting win for the day.

Now, before anyone comes for me...

I'm not a dietitian. I'm definitely not a chef. This isn't a recipe claiming to be the healthiest muffin on the internet or the answer to all your family's nutritional needs.

It's simply a recipe I genuinely love making for my family. Friends have asked me for it so many times that I figured it deserved a permanent home here.

So if you're looking for a muffin that's easy to make, packed with ingredients I personally love using, and somehow manages to keep everyone in the house happy... this one's for you.

My Family Blueberry & Banana Muffins

Makes approximately 12 muffins
Ingredients
  • 1 cup almond meal
  • 1½ cups self-raising wholemeal flour
  • 2 ripe bananas, mashed
  • 1 cup biodynamic organic Jalna yoghurt
  • 1 cup fresh or frozen organic blueberries
  • 6 Medjool dates pitted (or 8 smaller dates)
  • ½ cup warm water (for soaking dates)
  • 1-2 tbsp chia seeds
  • 2 tbsp hemp protein powder (or whatever kid friendly protein you use)
  • 2 tbsp collagen powder
  • 2 tbsp Ceres Organics maple syrup
  • ½ cup Noshu Zero Sugar White Chocolate Baking Bits (folded through)
  • Extra Noshu White Chocolate Baking Bits for melting and drizzling over the top

Method

1. Prep your dates

Place the dates into a bowl with the warm water and leave them to soften for around 10–15 minutes. Once soft, blend them with a splash of the soaking water until you have a smooth caramel-like paste.

2. Preheat

Heat your oven to 180°C (160°C fan-forced) and line or grease a 12-hole muffin tray.

3. Mix the wet ingredients

In a large bowl combine:

  • Mashed bananas
  • Jalna yoghurt
  • Date paste
  • Maple syrup

Stir until smooth.

4. Add the goodness

Mix through:

  • Chia seeds
  • Hemp protein powder
  • Collagen powder

5. Fold in the dry ingredients

Gently stir through the almond meal and wholemeal self-raising flour until just combined.

Fold through the blueberries and white chocolate baking bits.

Try not to overmix, the fluffier the batter, the fluffier the muffins.

6. Bake

Divide evenly between your muffin cases.

Bake for 20–25 minutes, or until golden and a skewer inserted into the centre comes out clean.

Allow to cool for around 10 minutes.

7. The best bit...

Melt a handful of the Noshu Zero Sugar White Chocolate Baking Bits and generously drizzle over the cooled muffins.

Because life's too short not to add the drizzle.

Tara's Little Notes

  • Freeze beautifully for busy mornings.
  • Pop one in the lunchbox straight from the freezer—it'll be perfectly defrosted by recess.
  • They're delicious slightly warm with a little butter (trust me).
  • Frozen blueberries work just as well as fresh.
  • If your bananas are looking a little sad on the bench, they're probably perfect for this recipe.

Around here, we're simply trying to make choices that feel good for our families. Sometimes that's homemade muffins packed with ingredients we love. Sometimes it's a googy egg and baked beans on toast for dinner because everyone's had a day.
